New zip code, new selection of restaurants. Half day of vacation from work, checking out a new favorite is the BEST way to spend it.
First on the list to check out, NOFO @ the Pig. Located in the Five Points District area of Raleigh, this charming restaurant/store combo was a hit. There are many things Alex and I do well together and almost never disagree on. #1 on that list is food. We don’t consider ourselves foodies (we are too cheap for that), but we do love to eat. The decision was tough, and neither of us could decide between the Avocado BLT or the Pulled Pork Wrap, so we got both and shared! I still haven’t decided what I will get next time because both were so dang good.
After a month long rut of cooking the same meals over and over again, I jumped back on the pinterest recipe wagon and found several new recipes to try this week. The choice of what to try first was a no brainer. And not to mention, a big YUM.
This recipe was the bomb (and can be found here). There’s not too many recommendations after making this recipe, but I will say, take the recipe seriously when it says to tear the spinach into pieces. Didn’t pay attention to that and ended up with big pieces of spinach slim.

Chicken Pot Pie was definitely not a new recipe for me to try… except for this time, I could not find the recipe to save my life! I knew I had all the ingredients but had no clue what amounts to use.
So this was my attempt at winging it. And it was a Yum! I was just as shocked as the guests that I had over were, but somehow, it turned out alright. I guess it’s hard to mess up pie crust and butter.
Now I don’t have a recipe to recommend, but I can tell you the ingredients and my guess at how much I used!
- rotisserie chicken
- frozen corn & peas
- butter (2 tbsp)
- 2 pie crusts (one for the bottom and one for the top)
- 1 onion
- flour (half a cup)
- skim milk & chicken broth (just kept adding until it looked like the consistency I wanted!)
- garlic salt & black pepper to taste
Cooked it on 350 for about 45 min to an hour. Good luck!
After one sweet craving of the week was not quite pleasing… I needed a guarantee. I thought for sure these bad boys wouldn’t fail me. Boy was I right. Skinny Cinna Swirls… LOVE. Big YUM! in my book.

Yes. You read it right. Black bean brownies. No butter. No flour. Basically no fun at all. But I just couldn’t believe you could make brownies out of black beans. Boy was I wrong.

Now before I say anything, let me just say I am probably way too biased and really only like one brand of brownies (Ghirardelli dark chocolate to be exact), but I saw this recipe and I just had to try it. I will say I was pleasantly surprise by the taste, they actually did taste like brownies. I however couldn’t get past the texture. I’m a texture girl in general, I can’t handle seeds or pulp or any of the sorts… but if I’m going to spend the calories on something sweet, I gotta love it. And for that reason alone, this one was a yuck for me. BUT a girl at work made it and loved it. So again, I’m probably too biased, but there ya go. If I had to be gluten free, this would definitely be a go to sweet treat.
FOREWARNING… you must enter this recipe knowing it is made with spaghetti squash and low-fat Alfredo. If you come in hoping you won’t know the difference, you might consider this a yuck! But knowing it is a much better substitute and still getting a creamy sauce, this was a yum in my book.

-get a small to medium size spaghetti squash. I was hungry when I shopped, so I went with the biggest squash I saw. This meant that the squash to sauce ratio was a little off.

My favorite freakin cookies are Chocolate Chip Oatmeal Craisin Cookies from Atlanta Bread Co. Since moving to NC there is not an Atlanta Bread Co. anywhere within reach. I have been in utter despair over missing these cookies. (First world probs.. I know.)
I love parties and any reason to bake something. So naturally I bake something I want to have left overs of. Pinterest had oodles of recipes for these cookies, and let me tell you.. they are the bomb. Better than ABC and made all my Christmas dreams come true.
